Fesenjan - Persian Pomegranate Walnut Stew

Dish History:

Fesenjan is a classic Persian dish known for its unique combination of sweet and savory flavors. It has a history that dates back to ancient Persia, where it was traditionally prepared using ingredients like pomegranate molasses, ground walnuts, and poultry. This dish is often served during special occasions and celebrations in Iran.


Ingredients:

For the Stew:

  • 2 lbs (900g) boneless chicken thighs or duck breast, cut into pieces (traditional Fesenjan uses poultry, but you can also use beef or lamb)
  • 2 cups of ground walnuts
  • 1 cup of pomegranate molasses
  • 2 large onions, finely chopped
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of ground cardamom
  • Salt and pepper to taste
  • 1-2 cups of water or chicken broth (as needed)

For Garnish:

  • Pomegranate seeds (optional)
  • Crushed walnuts (optional)

For Serving:

  • Cooked Basmati rice

Instructions:

1. Preparing the Stew:

a. In a large, heavy-bottomed pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent and start to caramelize, about 10-15 minutes.

b. Add the chicken pieces (or your choice of meat) and brown them on all sides.


c. Stir in the ground walnuts and cook for about 10 minutes, allowing the nuts to toast slightly and release their oils.

d. Add the pomegranate molasses, ground cinnamon, ground nutmeg, ground cardamom, salt, and pepper. Mix well.

e. Pour in enough water or chicken broth to cover the ingredients. Bring the stew to a simmer, then reduce the heat to low, cover, and cook for about 1.5 to 2 hours, or until the meat is tender and the stew has thickened. Stir occasionally and add more liquid if needed.

2. Serving:

a. Fesenjan is traditionally served with Basmati rice. Place a mound of rice on a plate and spoon the Fesenjan stew over it.

b. Optionally, garnish with pomegranate seeds and crushed walnuts for added texture and flavor.
