 Ingredients:

For the Paneer Stuffing:

  • 200g paneer (cottage cheese), crumbled
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped bell peppers (use a mix of colors)
  • 2 tablespoons chopped coriander leaves
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 1 tablespoon cooking oil

For the Quinoa and Spinach Base:

  • 1 cup quinoa, rinsed and cooked according to package instructions
  • 2 cups fresh spinach, finely chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Bell Peppers:

  • 4 large bell peppers, halved and seeds removed

For the Tomato Sauce:

  • 1 can (400g) crushed tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions:

  1. Prepare the Paneer Stuffing:

    • Heat oil in a pan over medium heat. Add chopped onions and sautΓ© until translucent.
    • Add ginger-garlic paste and cook for another minute.
    • Add crumbled paneer, grated mozzarella, chopped bell peppers, garam masala, cumin powder, and salt. Mix well and cook for 2-3 minutes.
    • Stir in chopped coriander leaves, cook for an additional minute, and then set aside.

  2. Prepare the Quinoa and Spinach Base:

    • In a separate pan, heat olive oil over medium heat. Add chopped spinach and cook until wilted.
    • Add cooked quinoa to the spinach, season with salt and pepper, and mix well. Set aside.
  3. Prepare the Bell Peppers:

    • Preheat the oven to 375°F (190°C).
    • Cut the bell peppers in half and remove the seeds.
    • Blanch the bell pepper halves in hot water for 3-4 minutes, then drain.
  4. Prepare the Tomato Sauce:

    • Heat olive oil in a saucepan, add crushed tomatoes, dried oregano, dried basil, sugar, salt, and pepper.
    • Simmer the sauce over low heat for 10-15 minutes, allowing it to thicken.
  5. Assemble and Bake:

    • Place the blanched bell pepper halves in a baking dish.
    • Stuff each pepper half with the paneer mixture.
    • Spoon the quinoa and spinach mixture around the stuffed peppers.
    • Pour the tomato sauce over the stuffed peppers and around the quinoa mixture.
    • Bake in the preheated oven for 25-30 minutes or until the peppers are tender and the cheese is melted and golden.
  6. Serve:

    • Garnish with additional chopped coriander leaves.
    • Serve hot and enjoy your innovative paneer dish!

However, the specific recipe for Paneer Tikka as we know it today has evolved more recently in Indian cuisine, likely during the mid-20th century.

Recipe: Paneer Tikka

  • Bell peppers (red, green, and yellow), cut into cubes
  • Onion, cut into cubes

  • Cooking oil or melted butter for basting

Instructions:

Marinating the Paneer:

  1. In a mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, lemon juice, and salt to create the marinade.

  2. Add the paneer cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour to allow the flavors to meld. Overnight marination is even better for more flavorful results.

Paneer Tikka Masala:

Paneer Tikka Masala is a popular North Indian dish known for its succulent chunks of marinated paneer (Indian cottage cheese) cooked in a rich and flavorful tomato-based gravy. This dish is often served during special occasions like Raksha Bandhan, a festival celebrating the bond between siblings.


Ingredients:

For the Paneer Tikka:

  • 250g paneer, cubed
  • 1/2 cup thick yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste
  • Skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Gravy:

  • 2 tablespoons oil or ghee
  • 1 large onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 cup heavy cream or cashew cream
  • Salt to taste
  • Fresh cilantro leaves for garnishing

Instructions:

  1. In a mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt. Mix well to create a marinade.

  2. Add the paneer cubes to the marinade and coat them well. Allow the paneer to marinate for at least 30 minutes, preferably longer, in the refrigerator.

  3. Preheat the oven to 200°C (390°F). Thread the marinated paneer cubes onto skewers and place them on a baking sheet. Bake for about 15-20 minutes, turning them once halfway through, until the paneer is slightly charred around the edges.

  4. In a large skillet, heat oil or ghee over medium heat. Add the chopped onions and sautΓ© until they turn golden brown.

  5. Add ginger-garlic paste and sautΓ© for another minute until the raw smell disappears.

  6. Add cumin powder, coriander powder, red chili powder, and turmeric powder. Cook the spices for a couple of minutes until fragrant.

  7. Add the tomato puree and cook until the oil starts to separate from the mixture.

  8. Pour in the cream and garam masala. Mix well and let the gravy simmer for a few minutes.

  9. Gently slide in the baked paneer tikka pieces and stir to coat them with the gravy. Let it simmer for another 5-7 minutes, allowing the flavors to meld together.

  10. Garnish with fresh cilantro leaves and serve the Paneer Tikka Masala hot with Jeera Rice and Gajar Halwa.

Jeera Rice: Jeera Rice, also known as cumin rice, is a simple and aromatic Indian rice dish made with basmati rice and cumin seeds.

Ingredients:

  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • Salt to taste

Instructions:

  1. Wash the basmati rice thoroughly in cold water and soak it for about 30 minutes. Drain the water.

  2. In a heavy-bottomed pan, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.

  3. Add the soaked and drained rice to the pan. SautΓ© for a couple of minutes, stirring gently to coat the rice with the cumin-infused oil.

  4. Add water and salt to the rice. Bring to a boil.

  5. Once it starts boiling, reduce the heat to low, cover the pan with a tight-fitting lid, and let the rice simmer for about 15-20 minutes or until the rice is cooked and the water is absorbed.

  6. Fluff the rice gently with a fork and let it sit covered for a few more minutes before serving.

Gajar Halwa: Gajar Halwa is a popular Indian dessert made from grated carrots cooked in ghee, milk, and sugar, often garnished with nuts. It's a rich and indulgent treat commonly served during festivals and celebrations.

Ingredients:

  • 500g carrots, peeled and grated
  • 2 cups whole milk
  • 1/4 cup ghee
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • Chopped nuts (almonds, pistachios) for garnishing

Instructions:

  1. In a heavy-bottomed pan, heat ghee over medium heat. Add the grated carrots and sautΓ© for 8-10 minutes until they soften and release their moisture.

  2. Add the milk to the pan and bring it to a boil. Reduce the heat to low and let the mixture simmer, stirring occasionally, until the carrots absorb most of the milk.

  3. Add sugar and continue to cook, stirring frequently, until the mixture thickens and the ghee starts to separate from the halwa.

  4. Stir in the cardamom powder and chopped nuts.

  5. Continue to cook for another 5-10 minutes until the halwa reaches a desired consistency and the carrots are fully cooked.

  6. Remove from heat and let it cool slightly before serving.
