Pongal is a popular dish from South India, especially Tamil Nadu, and is commonly prepared during the harvest festival of the same name. It is a traditional rice dish that has been enjoyed for centuries, and its name "Pongal" literally means "boiling over" or "spilling over," signifying abundance and prosperity.

Instructions:
Rinse the rice and moong dal together until the water runs clear. Then, soak them in water for about 15-20 minutes.
In a pressure cooker, add the soaked rice and moong dal along with 4 cups of water and 1 cup of milk. Close the lid and cook on medium heat for 3-4 whistles until the rice and dal are well cooked and mushy.
Once the pressure releases, open the cooker and mash the rice and dal mixture well using a ladle. You can make it as creamy or coarse as you prefer.
In a separate pan, heat the ghee on medium heat. Add cashew nuts and raisins and fry until they turn golden brown. Remove them from the pan and set aside.
In the same pan with remaining ghee, add crushed peppercorns, cumin seeds, chopped ginger, and curry leaves. SautΓ© until the spices release their aroma.
Add the sautΓ©ed spices to the mashed rice and dal mixture. Also, add turmeric powder and salt. Mix everything well.
Bring the Pongal to a gentle simmer and cook for another 5-7 minutes, allowing the flavors to meld together.
Serve hot Pongal with the fried cashew nuts and raisins on top.
