Ingredients:

- 1 potato, peeled and diced
- 1 cup grated fresh coconut

- 4-5 cloves of garlic, minced
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- A pinch of asafoetida (hing)
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Prepare the Coconut Paste:
- In a blender, combine the grated coconut with a little water and blend until you get a smooth paste. Set aside.

- Boil the mixed vegetables and diced potato in salted water until they are slightly tender. Drain and set them aside.
