Bengali Bhuna Chicken

 History of Bengali Bhuna Chicken:

Bengali Bhuna Chicken is a popular dish that reflects the vibrant and diverse flavors of Bengali cuisine. The dish is known for its rich and intense flavors, achieved through the process of "bhuna," which involves slow-cooking and reducing the spices with the meat. This dish showcases the use of various spices and techniques that are integral to Bengali cooking.


Ingredients:

  • 1 whole chicken, cut into pieces or bone-in chicken pieces (you can use any cuts you prefer)
  • 2 large onions, finely sliced
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, slit lengthwise (adjust to taste)
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon mustard oil (optional)
  • 4-5 tablespoons vegetable oil or ghee
  • Salt to taste
  • Fresh cilantro leaves for garnishing

Instructions:

1. Marinating the Chicken:

  1. Mix the chicken pieces with ginger paste, garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Let the chicken marinate for about 30 minutes.

2. Cooking the Chicken:

  1. Heat oil or ghee in a heavy-bottomed pan or kadai.
  2. Add the marinated chicken pieces and brown them on all sides. Remove the chicken from the pan and set aside.

3. Making the Bhuna Masala:

  1. In the same pan, add a little more oil if needed.
  2. Add the sliced onions and sauté until they turn golden brown.
  3. Add the green chilies and chopped tomatoes. Cook until the tomatoes soften and the oil starts to separate.

4. Cooking the Chicken with Bhuna Masala:

  1. Return the browned chicken pieces to the pan and mix well with the bhuna masala.
  2. Cover the pan and cook the chicken on low heat, stirring occasionally. The process of bhuna involves slow-cooking the chicken and reducing the masala until it coats the chicken pieces.

5. Adding Garam Masala and Finishing Touch:

  1. Once the chicken is cooked through and the masala is well-reduced, add garam masala and mustard oil (if using).
  2. Mix well and cook for a couple of more minutes.

6. Serving:

  1. Garnish with fresh cilantro leaves.
  2. Serve Bengali Bhuna Chicken with steamed rice or roti for a flavorful and satisfying meal.
