History:

Goa, a picturesque coastal state on the southwestern coast of India, boasts a rich culinary heritage influenced by centuries of diverse cultures. One of the most iconic dishes to emerge from this region is Goan Prawn Balchão. This spicy, tangy, and aromatic dish is a testament to Goa's history of trade and cultural exchange.


The history of Goan cuisine is a tapestry woven with threads from various cultures such as Portuguese, Konkani, and Saraswat Brahmin. Balchão, derived from the Portuguese word 'balichão,' is believed to have originated during the era of Portuguese colonization in the 16th century. The Portuguese introduced ingredients like vinegar, red chilies, and tomatoes to the Goan cuisine, which significantly influenced this dish.

Prawn Balchão is a delightful fusion of these cultural influences. The dish is known for its bold flavors, achieved through the use of spices, vinegar, and the quintessential Goan ingredient - dried red chilies. Over the centuries, it has evolved and adapted to local tastes, becoming an integral part of Goan culinary identity.

Recipe:

Ingredients:

  • 500g fresh prawns, cleaned and deveined
  • 15-20 dried red chilies (adjust to your spice preference)
  • 1 large onion, finely chopped
  • 1 tomato, finely chopped
  • 6-8 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 4-5 peppercorns
  • 2-3 tablespoons vinegar
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Chilies:

    • Remove the stems from the dried red chilies and soak them in warm water for about 20 minutes until they become soft.
  2. Make the Spice Paste:

    • Drain the soaked chilies and blend them into a smooth paste with a little water.
  3. Marinate the Prawns:

    • In a bowl, combine the cleaned prawns with turmeric powder and a pinch of salt. Set them aside for 15-20 minutes.
  4. Fry the Prawns:

    • Heat 1 tablespoon of oil in a pan. Fry the marinated prawns until they turn pink and are cooked through. Remove them from the pan and set them aside.
  5. Prepare the Balchão Masala:

    • In the same pan, add the remaining oil. Add cumin seeds, mustard seeds, cloves, cinnamon, and peppercorns. Sauté for a minute until they release their aroma.
  6. Add Aromatics:

    • Add minced garlic and ginger. Sauté for a few more minutes until they turn golden brown.
  7. Add Onions and Tomatoes:

    • Add finely chopped onions and tomatoes. Cook until they become soft and the oil starts to separate.
  8. Add Chili Paste:

    • Add the prepared chili paste and cook for another 10-15 minutes until the oil separates again.
  9. Add Vinegar:

    • Pour in the vinegar and mix well. Let it simmer for a few minutes.
  10. Combine with Prawns:

    • Add the fried prawns to the Balchão masala and stir well. Cook for an additional 5 minutes to allow the flavors to meld.
  11. Garnish and Serve:

    • Garnish with fresh coriander leaves. Serve Goan Prawn Balchão hot with steamed rice or crusty bread.

Pomfret, with its mild and delicate flavor, is a perfect canvas for the vibrant and spicy flavors of Goan cuisine. The history of Pomfret Masala can be traced back to the Portuguese influence on Goan cuisine, which introduced a blend of spices and cooking techniques that have become synonymous with Goan cooking.


Recipe: Pomfret Masala

Ingredients:

For the Pomfret Marinade:

  • 2 whole Pomfret fish (cleaned and gutted)
  • Juice of 1 lemon
  • Salt to taste

For the Masala Paste:

  • 2 medium onions (chopped)
  • 4 cloves garlic (minced)
  • 1-inch piece of ginger (minced)
  • 2-3 green chilies (adjust to your spice preference)
  • 1 cup fresh tomatoes (chopped)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 cup fresh coriander leaves (chopped)
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions:

1. Marinate the Pomfret:

  • Rub the cleaned Pomfret fish with lemon juice and salt. Let them sit for 15-20 minutes while you prepare the masala paste.

2. Prepare the Masala Paste:

  • Heat vegetable oil in a pan over medium heat.
  • Add chopped onions and sauté until they become translucent.
  • Add minced garlic, ginger, and green chilies. Continue to sauté for another few minutes until the raw aroma disappears.

  • Add chopped tomatoes and cook until they turn soft and the oil starts to separate.
  • Stir in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for a couple of minutes to blend the flavors.
  • Remove the mixture from heat and let it cool.
  • Once cooled, blend the mixture into a smooth paste. You can add a little water if needed.

3. Cook the Pomfret:

  • Preheat the oven to 180°C (350°F).
  • Place the marinated Pomfret fish in a baking dish.
  • Spread the masala paste over the fish, ensuring it covers the entire surface.
  • Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the masala forms a slightly browned crust.

4. Garnish and Serve:

  • Remove the Pomfret Masala from the oven and garnish with chopped fresh coriander leaves.
  • Serve hot with steamed rice or crusty bread.

Note: You can also prepare this dish on the stovetop by simmering the fish in the masala paste until it's cooked through.
