Recipe: Mui Borok (Tripuri Bamboo Shoot Curry)

Ingredients:

  • 250g bamboo shoots (fresh or canned)
  • 100g pork, chicken, or fish (cut into bite-sized pieces)
  • 1 medium-sized potato (peeled and diced)
  • 2-3 green chilies (adjust according to spice preference)
  • 1 medium-sized onion (finely chopped)
  • 2-3 cloves of garlic (minced)
  • 1-inch piece of ginger (minced)
  • 2 tablespoons mustard oil (can be substituted with vegetable oil)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to spice preference)
  • Salt to taste
  • Fresh cilantro leaves (for garnishing)

Instructions:

  1. Preparing the Bamboo Shoots:

    • If using fresh bamboo shoots, clean them thoroughly, remove the tough outer layers, and cut them into thin slices. Boil the slices in water with a pinch of salt for about 15-20 minutes to reduce bitterness. Drain and set aside.
    • If using canned bamboo shoots, rinse them under cold water to remove excess brine. Slice them into smaller pieces if needed.
  2. Marinating the Meat (if using):

    • If using pork, chicken, or fish, marinate the meat with a pinch of turmeric powder, red chili powder, and a little salt. Let it sit for about 15-20 minutes.
  3. Cooking the Dish:

    • Heat the mustard oil in a pot or pan until it reaches smoking point. Let it cool down slightly to reduce its pungency.
    • Add the marinated meat (if using) and stir-fry until it's lightly browned. Remove and set aside.
  4. Preparing the Curry:

    • In the same pan, add a bit more oil if needed. Add the minced garlic and ginger, and sautΓ© until aromatic.
    • Add the chopped onions and green chilies. SautΓ© until the onions turn translucent.

  5. Spicing the Curry:

    • Add turmeric powder, red chili powder, and salt. Mix well to coat the onions and spices evenly.
  6. Adding Bamboo Shoots and Potatoes:

    • Add the boiled bamboo shoots and diced potatoes. Stir to combine.
  7. Simmering:

    • Add water as needed to create a gravy. Bring the mixture to a simmer and let it cook until the potatoes are tender and the flavors are well combined.
  8. Final Touch:

    • Return the stir-fried meat to the pan and mix it with the bamboo shoots and potatoes. Simmer for a few more minutes to allow the flavors to meld.
  9. Garnishing:

    • Garnish with fresh cilantro leaves.
  10. Serving:

    • Mui Borok is traditionally served with rice or rice cakes called "chakwi." Enjoy the rich flavors and unique taste of this authentic Tripuri dish.

Remember that traditional recipes can vary slightly from one household to another, so feel free to adjust the ingredients and seasonings according to your taste preferences.

History of Bamboo Shoot and Pork Bhut Jolokia Curry:

Bamboo Shoot and Pork Bhut Jolokia Curry is a traditional dish that originates from the northeastern region of India, particularly from the states of Assam, Nagaland, and Manipur. These states are known for their rich cultural diversity and vibrant cuisine, and this curry is a testament to their culinary heritage.

Bhut Jolokia, also known as the Ghost Pepper, is one of the world's spiciest chili peppers. It was once recognized as the world's hottest pepper by the Guinness World Records. This pepper is native to the northeastern states of India and has been a staple in the local cuisine for centuries. The use of bamboo shoots is also common in this region due to the abundance of bamboo groves.

The combination of these two ingredients, along with pork, creates a dish that is not only incredibly flavorful but also showcases the heat of the Bhut Jolokia pepper. This curry is often enjoyed with steamed rice, which helps balance the spiciness of the dish.

Recipe for Bamboo Shoot and Pork Bhut Jolokia Curry:

Please note that the following recipe is a general guideline and can be adjusted according to personal preferences.

Ingredients:

  • 500g pork, cut into bite-sized pieces
  • 1 cup bamboo shoots, sliced (fresh or canned)
  • 2-3 Bhut Jolokia peppers (adjust to taste), finely chopped or whole for milder heat
  • 1 large onion, finely chopped
  • 3-4 garlic cloves, minced
  • 1-inch ginger, minced
  • 1 tomato, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • 2-3 tablespoons cooking oil
  • Water

Instructions:

  1. Heat oil in a heavy-bottomed pot or skillet over medium heat.

  2. Add the chopped onions and sautΓ© until they turn golden brown.

  3. Add minced garlic and ginger. SautΓ© for another minute until fragrant.

  11. Once the pork is cooked, adjust the seasoning if needed. You can add more chopped Bhut Jolokia peppers at this stage if you want the curry to be spicier.

  12. Garnish with fresh cilantro leaves.

  13. Serve the Bamboo Shoot and Pork Bhut Jolokia Curry hot with steamed rice.
