Goan Chicken Cafreal

History:

Goan Chicken Cafreal is a vibrant and flavorful dish that has its roots in Portuguese influence on Goan cuisine. It draws inspiration from the Portuguese dish "Galinha Cafreal," which was adapted and transformed by the Goans to create this delicious chicken dish. Cafreal refers to the unique green marinade used in this preparation.

Recipe:

Ingredients:

  • 500g chicken pieces (bone-in or boneless)
  • For the Marinade:
    • 10-12 green chilies (adjust to your spice preference)
    • 6-8 cloves of garlic
    • 1-inch piece of ginger
    • 1 small bunch of fresh coriander leaves (with stems)
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon black peppercorns
    • 1/2 teaspoon cinnamon powder
    • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 lemon, juiced
  • 1 onion, finely chopped (for garnish)
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Marinade:

    • In a blender, combine the green chilies, garlic, ginger, fresh coriander leaves (including stems), cumin seeds, turmeric powder, black peppercorns, cinnamon powder, and salt. Blend into a smooth paste using a little water.
  2. Marinate the Chicken:

    • In a bowl, mix the chicken pieces with the green marinade paste, lemon juice, and a pinch of salt. Make sure the chicken is well coated. Let it marinate for at least 2-3 hours, or overnight for the best flavor.

  3. Cook the Chicken:

    • Heat oil in a pan or skillet. Add the marinated chicken pieces and cook on medium-high heat. Ensure the chicken is cooked through and the marinade turns into a thick coating on the chicken. This may take about 20-25 minutes.
  4. Garnish and Serve:

    • Garnish with finely chopped onions and fresh coriander leaves. Serve Goan Chicken Cafreal hot with rice or bread.

Goan Chicken Cafreal is known for its aromatic and spicy flavors, making it a popular choice among locals and visitors alike. It's a fantastic representation of Goan cuisine's rich history and the fusion of Portuguese and Indian influences. Enjoy the vibrant and tantalizing flavors of this dish!
