Ilish Bhuna: Spicy Hilsa Fish Curry

History:

Ilish Bhuna is a beloved Bengali dish known for its rich, spicy flavors and the tender hilsa fish. This dish is characterized by a slow-cooked, thick gravy that coats the fish, resulting in a truly indulgent culinary experience.


Ingredients:

For Marinating the Fish:

  • 4 pieces of fresh hilsa fish (ilish)
  • 1/2 teaspoon turmeric powder
  • Salt to taste

For the Gravy:

  • 2 tablespoons mustard oil
  • 1 teaspoon black mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 dried red chilies
  • 1 large onion, finely sliced
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1 cup warm water
  • Fresh cilantro leaves for garnish

Instructions:

  1. Marinate the Fish:

    • Clean the hilsa fish pieces and marinate them with turmeric powder and salt. Set aside for about 15-20 minutes.
  2. Heat Mustard Oil:

    • Heat mustard oil in a deep, heavy-bottomed pan until it starts to smoke. Then, reduce the heat to medium.
  3. Temper with Mustard and Cumin Seeds:

    • Add the black mustard seeds, cumin seeds, and dried red chilies to the hot oil. Allow them to sizzle and release their flavors.

  4. Sauté Onions:

    • Add the finely sliced onions and sauté until they turn golden brown.
  5. Add Aromatics:

    • Stir in ginger paste and garlic paste. Sauté for a few minutes until the raw aroma disappears.
  6. Spice it Up:

    • Add turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well and sauté for a couple of minutes to create a flavorful base.
  7. Add Marinated Fish:

    • Carefully place the marinated hilsa fish pieces into the pan. Allow them to sear lightly on both sides.
  8. Pour Warm Water:

    • Add the warm water to create a thick gravy. Adjust salt to taste.
  9. Simmer and Cover:

    • Reduce the heat, cover the pan with a lid, and let the fish cook in the flavorful gravy for about 15-20 minutes or until the fish is cooked through.
  10. Garnish and Serve:

    • Garnish the Ilish Bhuna with fresh cilantro leaves.
  11. Serve Hot:

    • Serve the Ilish Bhuna hot with steamed rice. The thick, spicy gravy and the tender hilsa fish create a delightful and satisfying Bengali meal.
