Deep Fried Channa

 History: While there isn't a specific historical account of when and where this dish originated, deep-frying has been a common cooking technique in Indian cuisine for centuries. Chickpeas have also been a part of Indian cuisine for a long time. Combining the two with garlic and spices likely resulted from experimentation in Indian kitchens.


Ingredients:

For the Chana:

  • 1 cup dried chickpeas
  • Water for soaking
  • Oil for deep frying
  • Salt to taste

For the Garlic Seasoning:

  • 6-8 cloves of garlic, finely minced
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions:

1. Soaking the Chickpeas:

  • Rinse the dried chickpeas in cold water.
  • Place them in a large bowl and cover with enough water to submerge them completely.
  • Allow the chickpeas to soak for at least 6-8 hours or overnight. This will soften them and reduce frying time.
    2. Cooking the Chickpeas:
  • Drain the soaked chickpeas and rinse them once more.
  • In a large pot, add the chickpeas and cover with water.
  • Bring the water to a boil, then reduce the heat to a simmer.
  • Cook for 45 minutes to 1 hour or until the chickpeas are tender but not mushy.
  • Drain and set aside.

3. Deep Frying the Chickpeas:

  • Heat enough oil in a deep frying pan or pot to submerge the chickpeas.
  • Once the oil is hot (around 350°F or 175°C), carefully add the cooked chickpeas in batches.
  • Fry until they turn golden brown and crispy, which should take about 3-5 minutes.
  • Remove the fried chickpeas using a slotted spoon and place them on paper towels to drain excess oil.

4. Preparing the Garlic Seasoning:

  • In a separate pan, heat 2 tablespoons of vegetable oil over medium heat.
  • Add the finely minced garlic and sauté until it becomes fragrant and starts to turn golden brown.
  • Add the red chili powder, turmeric powder, cumin powder, coriander powder, and salt.
  • Cook the spices with the garlic for a minute or two, stirring continuously, to enhance their flavor.

5. Mixing the Fried Chana and Garlic Seasoning:

  • In a large bowl, combine the deep-fried chickpeas and the garlic-spice mixture.
  • Toss well to coat the chickpeas evenly with the seasoning.

6. Serving:

  • Serve your deep-fried Chana with Garlic as a crunchy and flavorful snack.
  • You can also garnish it with fresh coriander leaves or a squeeze of lemon juice for added freshness.
