Mui Borok- Haritage of Tripura

History:

Mui Borok is a traditional dish from the Tripuri community, an indigenous group inhabiting the northeastern Indian state of Tripura. The dish reflects the cultural heritage and culinary traditions of the Tripuri people. Mui Borok holds significance not only as a delicious dish but also as a representation of their cultural identity.


Recipe: Mui Borok (Tripuri Bamboo Shoot Curry)

Ingredients:

  • 250g bamboo shoots (fresh or canned)
  • 100g pork, chicken, or fish (cut into bite-sized pieces)
  • 1 medium-sized potato (peeled and diced)
  • 2-3 green chilies (adjust according to spice preference)
  • 1 medium-sized onion (finely chopped)
  • 2-3 cloves of garlic (minced)
  • 1-inch piece of ginger (minced)
  • 2 tablespoons mustard oil (can be substituted with vegetable oil)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to spice preference)
  • Salt to taste
  • Fresh cilantro leaves (for garnishing)

Instructions:

  1. Preparing the Bamboo Shoots:

    • If using fresh bamboo shoots, clean them thoroughly, remove the tough outer layers, and cut them into thin slices. Boil the slices in water with a pinch of salt for about 15-20 minutes to reduce bitterness. Drain and set aside.
    • If using canned bamboo shoots, rinse them under cold water to remove excess brine. Slice them into smaller pieces if needed.
  2. Marinating the Meat (if using):

    • If using pork, chicken, or fish, marinate the meat with a pinch of turmeric powder, red chili powder, and a little salt. Let it sit for about 15-20 minutes.
  3. Cooking the Dish:

    • Heat the mustard oil in a pot or pan until it reaches smoking point. Let it cool down slightly to reduce its pungency.
    • Add the marinated meat (if using) and stir-fry until it's lightly browned. Remove and set aside.
  4. Preparing the Curry:

    • In the same pan, add a bit more oil if needed. Add the minced garlic and ginger, and sauté until aromatic.
    • Add the chopped onions and green chilies. Sauté until the onions turn translucent.

  5. Spicing the Curry:

    • Add turmeric powder, red chili powder, and salt. Mix well to coat the onions and spices evenly.
  6. Adding Bamboo Shoots and Potatoes:

    • Add the boiled bamboo shoots and diced potatoes. Stir to combine.
  7. Simmering:

    • Add water as needed to create a gravy. Bring the mixture to a simmer and let it cook until the potatoes are tender and the flavors are well combined.
  8. Final Touch:

    • Return the stir-fried meat to the pan and mix it with the bamboo shoots and potatoes. Simmer for a few more minutes to allow the flavors to meld.
  9. Garnishing:

    • Garnish with fresh cilantro leaves.
  10. Serving:

    • Mui Borok is traditionally served with rice or rice cakes called "chakwi." Enjoy the rich flavors and unique taste of this authentic Tripuri dish.
