Morola Mach er Chorchori

Morola Mach er Chorchori, also known as Morola Fish Curry, is a traditional Bengali dish from the Indian subcontinent. It's a popular and flavorful fish curry made with Morola fish, which is a type of small freshwater fish commonly found in rivers and ponds in the region. The dish is known for its simplicity and use of basic ingredients that result in a delicious and comforting meal.



History: Morola Mach er Chorchori is a dish deeply rooted in Bengali culinary heritage. Bengalis have a rich history of incorporating fish into their diet due to the abundant water resources in the region. Fish is considered a staple and an integral part of their culture and cuisine. Chorchori is a Bengali cooking technique that involves mixing various ingredients together and slow-cooking them. This technique is often used to prepare vegetable dishes, and in this case, fish.

Recipe: Here's a basic recipe for Morola Mach er Chorchori:

Ingredients:

  • 250 grams Morola fish, cleaned and washed

  • 2 medium-sized potatoes, peeled and diced
  • 1 medium-sized onion, finely chopped
  • 2-3 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Some crushed Garlic
  • Salt to taste
  • Mustard oil for cooking
  • Fresh coriander leaves for garnishing

Instructions:

  1. Heat mustard oil in a deep pan or kadai until it starts to smoke. This step is crucial in Bengali cooking to reduce the strong flavor of mustard oil.

  2. Lower the heat and let the oil cool down slightly. Then, add the diced potatoes and fry them until they turn slightly golden. Remove them from the oil and set aside.

  3. In the same oil, add the chopped onions and green chilies. Sauté them until the onions turn translucent.

  4. Add turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well and cook the spices for a minute until aromatic.

  5. Add the Morola fish and gently stir to coat the fish with the spices. Be careful not to break the fish while stirring.

  6. Add the fried potatoes back to the pan and carefully mix everything together.

  7. Cover the pan with a lid and let the fish and potatoes cook over low heat. The fish will release its own moisture, so you might not need to add water. However, if needed, you can add a small amount of water to prevent burning.


  8. Cook until the fish is tender and the potatoes are cooked through. The dish should have a semi-dry consistency, with the fish and potatoes coated in a flavorful gravy.

  9. Once the fish and potatoes are cooked, adjust the salt and spice levels according to your taste.

  10. Then Add Crushed Garlic and Cover from Some time

  11. Garnish with freshly chopped coriander leaves.

  12. Serve the Morola Mach er Chorchori with steamed rice for a traditional Bengali meal.
