Mantu is a popular Afghan dish with a history that spans centuries. These delicate dumplings are believed to have been introduced to Afghanistan through the influence of the Mongol Empire. Over time, Mantu has become a staple in Afghan cuisine and is enjoyed as both a daily meal and a special treat during celebrations.
Mantu is traditionally made with a filling of seasoned ground meat, often beef or lamb, and spices. The dumplings are typically served with yogurt and a tomato-based sauce. Recipe: Mantu (Afghan Dumplings)
Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1/2 cup water
- 1/2 tsp salt

- 1 lb (450g) ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground paprika
- Salt and black pepper, to taste
For the Tomato Sauce:
- 2 cups tomato sauce or puree
- 2 cloves garlic, minced
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- Salt and black pepper, to taste
For the Yogurt Sauce:
- 1 cup plain yogurt
- 1 clove garlic, minced
- Salt, to taste
Instructions:
Prepare the Dough:
- In a large mixing bowl, combine the flour and salt. Gradually add the water while kneading until you have a smooth, elastic dough. Cover with a damp cloth and let it rest for 30 minutes.
Prepare the Filling:
In a skillet, heat a bit of oil over medium heat. Add the finely chopped onions and minced garlic, and sauté until translucent.
Add the ground beef or lamb to the skillet and cook until browned, breaking it into small pieces as it cooks.
Season the meat with ground coriander, ground cumin, paprika, salt, and black pepper. Mix well and cook for a few more minutes. Remove from heat and let it cool.
Assemble the Dumplings (Mantu):
Roll out the dough on a floured surface into a thin sheet. Cut it into 3-inch squares.
Place a teaspoon of the meat filling in the center of each square.
Fold the squares into triangles and pinch the edges to seal them. Then, bring the two opposite corners of the triangle together to form a dumpling shape.
Steam the Dumplings:
- Arrange the dumplings in a steamer basket, making sure they don't touch each other. Steam them for about 30-35 minutes, or until the dough is fully cooked.
Prepare the Tomato Sauce:
- In a separate saucepan, combine the tomato sauce, minced garlic, ground coriander, ground cumin, salt, and black pepper. Simmer for about 10-15 minutes until the sauce thickens and the flavors meld.
Prepare the Yogurt Sauce:
- In a bowl, whisk together the plain yogurt, minced garlic, and a pinch of salt. Adjust the consistency with a little water if needed.
Serve Mantu:
- To serve, place the steamed Mantu on a plate, drizzle with the tomato sauce, and add a dollop of yogurt sauce on top. Garnish with fresh herbs if desired.
