Egg Biryani

History:

Ingredients:

  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon ground turmeric

For the Biryani Rice:

  • 1 1/2 cups basmati rice, soaked for 30 minutes and drained
  • 2 tablespoons vegetable oil or ghee (clarified butter)
  • 2 bay leaves
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 1 black cardamom pod (optional)
  • Salt to taste

For Assembling the Biryani:

  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup fresh coriander leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup fried onions (for garnish, optional)
  • Saffron strands soaked in warm milk (for garnish, optional)

Instructions:

For the Biryani Marinade:

1. Marinate the Eggs:

  • In a bowl, combine the yogurt, ginger paste, garlic paste, red chili powder, ground turmeric, and salt.
  • Coat the hard-boiled eggs with this marinade mixture and set them aside for at least 30 minutes.

For the Biryani Rice:

1. Cook the Rice:

  • In a large pot, bring plenty of water to a boil.
  • Add the soaked and drained basmati rice to the boiling water.
  • Cook the rice until it is about 70-80% cooked (still slightly firm), as it will continue to cook in the biryani. Drain the rice and set it aside.

2. Prepare the Biryani Spices:

  • In a separate pan, heat the vegetable oil or ghee over medium heat.
  • Add the bay leaves, green cardamom pods, cloves, cinnamon stick, and black cardamom pod (if using).
  • Sauté the spices for a minute or until they become aromatic.

3. Assemble the Biryani:

For Layering:

  • In a large, heavy-bottomed pot or biryani vessel, layer the marinated eggs at the bottom.
  • Add a layer of half-cooked rice on top of the eggs.

For Additional Layers:

  • Sprinkle chopped onions, tomatoes, fresh coriander leaves, and fresh mint leaves over the rice.
  • Repeat the process with another layer of rice and the remaining ingredients.

Final Layer:

  • Finish with a layer of rice on top.

4. Garnish:

  • Garnish the top layer with fried onions (if using) and saffron strands soaked in warm milk for an extra burst of flavor and color.

5. Dum Cooking:

  • Cover the pot with a tight-fitting lid or seal it with dough to ensure a tight seal.
  • Cook the biryani on low heat (dum cooking) for about 20-25 minutes. This allows the flavors to meld together and the rice to fully cook.

6. Serve:

  • Gently fluff the biryani with a fork before serving to mix the layers.
  • Serve hot with raita (yogurt dip) or a side salad.
