Soybean and Vegetable Stir-Fry



Ingredients:

  • 1 cup soybeans (cooked)
  • 1 cup mixed vegetables (such as bell peppers, carrots, broccoli, and snap peas), chopped
  • 2 tablespoons vegetable oil
  • 2 cloves of garlic (minced)
  • 1 teaspoon ginger (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish (optional)
  • Cooked rice or noodles for serving

Instructions:

  1. Prepare Ingredients: Make sure the soybeans are cooked and the vegetables are chopped before you start cooking.

  2. Stir-Fry: Heat the vegetable oil in a large wok or skillet over high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

  3. Add Vegetables: Add the chopped mixed vegetables to the wok and stir-fry for 2-3 minutes until they start to become tender but still retain their crispness.

  4. Add Soybeans: Add the cooked soybeans to the wok and continue to stir-fry for an additional 2 minutes to heat them through.

  5. Sauce: Pour the soy sauce and oyster sauce (if using) over the vegetables and soybeans. Toss everything together to coat evenly. You can adjust the amount of sauce according to your taste.

  6. Seasoning: Drizzle the sesame oil over the stir-fry and give it a final toss. Season with salt and pepper to taste.

  7. Garnish and Serve: Transfer the soybean and vegetable stir-fry to a serving dish. Garnish with chopped green onions and sesame seeds if desired. Serve over cooked rice or noodles.

  8. Enjoy: This soybean and vegetable stir-fry is a nutritious and flavorful dish that can be enjoyed as a main course or as a side dish.
