Chirer Polao

History:

Chirer Polao, also known as Chira Pulao or Flattened Rice Pilaf, is a traditional Bengali dish that originated in the Indian subcontinent, specifically in the region of West Bengal, India, and Bangladesh. It's a popular breakfast or snack option, often enjoyed with a cup of tea. Chirer Polao is made using flattened rice, which is known as "chira" in Bengali. The dish is a fusion of flavors, combining rice with various spices, vegetables, and sometimes protein sources like nuts or peas.



Recipe:

Here's a simple and traditional recipe for Chirer Polao:


Ingredients:


2 cups flattened rice (chira/poha)

1 medium-sized potato, peeled and diced

1 medium-sized onion, finely chopped

1/4 cup green peas (fresh or frozen)

1/4 cup chopped carrots

1/4 cup chopped bell peppers

1/4 cup cashew nuts and raisins (optional)

2-3 green chilies, finely chopped (adjust to taste)

1 teaspoon ginger paste

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

1/2 teaspoon garam masala

4-5 tablespoons cooking oil or ghee

Salt to taste

Fresh cilantro leaves, chopped, for garnishing

Instructions:


Preparation:


Rinse the flattened rice in a colander under cold water. Let it sit for about 10-15 minutes to soften. Then, gently fluff the rice with a fork to separate the grains.


Tempering:


In a deep pan or wok, heat oil or ghee over medium heat. Add the cumin seeds and let them splutter.

Sautéing Vegetables:


Add the chopped onions and sauté until they turn translucent.

Add the green chilies and ginger paste. Sauté for another minute.

Add the diced potatoes, carrots, bell peppers, and green peas. Mix well and cook for 5-7 minutes until the vegetables start to soften.

Spices:


Add the turmeric powder, red chili powder, and salt. Mix the spices well with the vegetables.

Flattened Rice Addition:


Gently add the soaked and fluffed flattened rice to the pan. Mix everything together so that the rice gets coated with the spices and vegetables. Be gentle to avoid breaking the rice grains.

Nut and Raisin Addition:


If using cashews and raisins, add them to the mixture and give it a good mix.

Finishing Touches:


Sprinkle garam masala over the rice and mix well.

Cover the pan with a lid and let it cook on low heat for about 5-7 minutes. This allows the flavors to meld and the rice to heat through.

Garnish and Serve:


Once the Chirer Polao is cooked, remove it from heat.

Garnish with chopped cilantro leaves.

Serve:


Chirer Polao is ready to be served. It can be enjoyed on its own or with a side of yogurt, chutney, or pickle.
